Yay, finally using my brain...

So, I finally thought about the fact that I could upload pics from my picture cd's instead of uploading them all onto the laptop or computer, since I have been having problems with both of them...I'm working on figuring out what their problems are, but that's another story! :) Here are a few of the long awaited pics!!! :)

These are a few from our 7 year anniversary!!!



These are the beautiful Anniversary flowers that Lee sent to me!!! :) I love the place he gets them delivered from! They do beautiful work!!! :)



Here is the suite we stayed in at The Embassy Suites at Sundance Square!!! We were soooo excited and a little surprised when we saw TWO rooms!!!



The bedding was GORGEOUS!!! It was so serene and soft and fluffy and crisp and white!!! :)



There's Lee peeking out the window in the "living room" area of the suite! There was a channel on the neato tv that we watched that zoned us out!!! Hahaha! You can see some of the images on the screen in the pic!!! :) Hehe! Loved the carpet in there too!!! :)



We also went to the Water Gardens!!! Here's Lee at the bottom! :) So neat!









These next few are from the following weekend at my 10 Year High School Reunion! That was fun and different and surreal all jam-packed into one!!! :) So, here are just a few pics of the evening!

Asher's One Now!

Well, Asher is now 1 year old!!! I cannot believe this year has gone by sooo fast!!! :) We celebrated as a family on the day and then went out to Lee's parents to see one of Lee's aunts who he hadn't seen in like 15 years!!! They had a little party for Asher out there! :) We got lots of pictures, but I still have to get to Walmart or Target to get them on a disk! :) I will get some pics of Asher's life up here during nap time today! :) Very fun!!! Well, I'm going to get working on that! I had them all ready to post on Friday night, and then I woke up on Saturday and the computer had deleted all of the pics on my side of the computer saved on the hard drive! There's not even a spot to save them anymore, like the My Pictures category!?! Who knows? I told Lee about the thing Audrea told me about and we were going to look at it during Lee's free time, but maybe it will still be an option! So sad! There are spots for 2 users on our computer and Lee's side still has the My Pictures file! Weird! Anyway, I'm going to try that one! :) Stay tuned...

Cream of Mushroom Stacked Chicken Enchiladas

Just thought I would give you guys my easy stacked enchilada recipe! I found a similar recipe and modified it so that it worked for me with what I had at home to use and things our kiddos will eat! ;) I usually fix rice and beans with it!!! It is always a hit at our house! Yum! It's what we're having tonight, in fact!!! I am sooo happy that Lee is finally able to ask me to fix some things that only I have made for him!!! :) He loves to cook, so it has been hard for me to take over that job without feeling a little intimidated by it!!! :) I am proud to say that I recieve regular requests and everything I cook is VERY EASY!!! It's also very yummy! :) Well, if you try it let me know what you think! Oh, and I really will be adding those pics! Just have to get to Walmart...

Cream of Mushroom Stacked Chicken Enchiladas

2 Chicken breast halves shredded or 3 cans of chicken
1 whole onion, chopped
1cup of sour cream
1 can Cream of mushroom soup (cream of chicken or celery can be used)
18 Corn tortillas
1 cup Pace Salsa mild or 1 can of Rotel
Cumin to taste
1 can of chicken broth
3 cups Cheese shredded


Directions
Cover chicken with water, add salt and boil until cooked. Shred once cooled. Save broth. (I used 3 cans of chunk chicken and a can of chicken broth instead of this step.) Saute a whole onion. Prepare cream of mushroom as indicated using broth. Add the onion, salsa and chicken and stir. Remove from heat and add 1 cup of cheese. Add cumin to taste. Place 6 tortillas on the bottom of the casserole dish, spoon enchilada mixture all over. Add another layer of tortillas and spoon more enchilada mixture on top. Add third layer of 6 tortillas. Add another 1/3 cup of sour cream to the remaining mixture and pour that on top. Bake at 350 for 20 minutes. Add cheese on top and bake another 15 minutes or until cheese is a little browned. Enjoy!

So...Saturday was my 10 year high school reunion...

Yep! I do have to say it makes me feel a little old...but not too old! :) I snapped a few pics, but haven't downloaded them yet. It was something that I don't think I would have ever known how to expect for, if that makes any sense. Almost everyone I asked said that they were nervous somewhat before they showed up! Haha! Why is that? We are 10 years removed from highschool and we still have some sort of need for the positive affirmation and connection with these people with whom we have mostly lost contact with! Sort of strange, if I do say so myself, but I too was nervous before I went. :) I told Lee I had butterflies on my way in the car! I did have a great time! Lee knew a few people, in particular a good friend of mine (Amanda) called to let me know they would be going and our hubby's know each other! That worked out well since neither of them went to our highschool! :) Even they had a great time!!! They are such great sports! :)

My biggest complaint was...my SHOES!!! They were soooooo cute, and they really helped me out since my pants were a little on the long side, but man, my feet were killing me! I think they have 2 inch heels or maybe taller! I know, all you heels wearing girls out there, I have no idea what I'm doing in those shoes! I will take a pic of them too, since I know you who know me well will love to laugh as you envision me hobbling up the sidewalk at the end of the evening! ;) I think I possibly looked like I had had too much to drink when in actuality...we had Coca Cola! :) I really just ended up taking off the heels in the middle of a few conversations so I could rest my feet. I was wondering what the people thought behind me, seeing my head bobbing up and down! I informed those in the conversation that I was about to shrink, so they were well informed, but... :) Is this a girly faux pas? Oh, well! Maybe this will help someone who is about to make the same mistake...okay, I think I would have worn them again, but does anyone have any tips on how to prevent your toes from cramping and nearly falling asleep? J/K I just measured the heels...ya, 4 inches! No wonder! It was different being taller, though! :) Crazy!

Well, enough about my shoes! I did have so much fun! :) I brought a little book of recent pics of the kiddos so that I could show them to anyone who cared to see them! :) It was really a surreal event! A few de ja vu moments, just looking at who was hanging out and stuff! Everyone had changed so much, but stayed the same in a lot of ways! One of my favorite things about the night was that I tried out one of the sample "looks" from my Mary Kay kit, and I figured out what foundation to wear! It was my first time to wear foundation!!! :) I have been using a cream to powder (which I love as well), but foundation is neato! ;) The colors from the look I picked were darker and browner than what I normally wear, but they were GORGEOUS!!! Fun for a little extra drama...which exactly describes a 10 Year High School Reunion! ;) Hehe!

All in all it was a fun filled evening full of adventures and surprises!!! One girl said that she had brought some flip flops just in case she needed them and I was sooooo close to asking her to borrow them! :) No, I'm glad I wore my cute shoes! I just hope that I'll forget the pain soon so that I can get my money's worth from them! ;) I am really very glad that we went! I just wish I could have talked more people! If you were out there and thought I didn't want to talk to people and that's why I didn't walk around and mingle much, just come back and check out the shoes when they are posted! ;)

Oy, I still need to get the pics up from last weekend's anniversary rendevous! Okay, I'll get everything all figured out! :)

7 Years of Marriage

Lee and I celebrated our 7th year of marriage on Saturday!!! This past weekend was sooo refreshing! It was the first time in 3 years that Lee and I spent a night away from the kiddos (and that was only Zoe then)!!! :) God was sooo merciful in His provision for family to care for the kids!!! There were no incidents while we were gone, which is always a mother's worry...especially when you don't get away a lot! :) We stayed at the Embassy Suites, which was wonderful!!! It was quiet and clean and serene...ah! :) I was quite surprised and VERY EXCITED when Lee told me that he got his mom to watch the kids for the night and that she would watch them until his sister came in as "reinforcements" to give us the whole next day as well!!! Our weekend was soooo much fun! We felt so free! Hahaha! It was so weird to walk around Sundance Square without a diaper bag and a double stroller and sippy cups!!! We decided that it would be a great time to go and get some of our Christmas shopping out of the way (since last year we were doing that the day before Christmas)! :)

I was planning on getting a bunch of pics up here yesterday, but I was busy getting ready for everything! So sorry, but I will also post a few of the flowers that he had delivered!!! :) BEAUTIFUL!!! :) He found a great florist who's not too expensive and she only does exotic flowers!!! I am sure loving this special treatment!!! :) I better not get too spoiled! ;) Ha! I will have to get to Wally World to get a disk of the new pics! For some reason our computer won't handle downloading pics onto it from the camera...if anyone knows why (besides the fact that we need a new one) let me know! It just says we don't have enough memory! It's making me crazy! Any answers?

Anyway, here are some pics of the day before our anniversary. That was the night Lenci and I went to the ER for her eye! She got chalk in it and it got a small scratch in it from either the abrasiveness of the chalk or the fact that she was rubbing her eyes like crazy! These are cute pics, but they are pre-hospital visit! :)
